So many readers provided recipes and meal tips a few weeks ago when I was feeling uninspired. I’m going to continue to share them over the next few Tuesdays, if that’s OK with y’all.
This recipe, from The Travel Diva intrigues me. I definitely plan to try it one of these nights. It’s for Balsamic Chicken, and this is how she makes it:
“I saute boneless chicken breasts in a pan, then add a can of diced tomotoes (the kind with garlic and herbs, etc.) and maybe about 1/3 cup balsamic vinegar. Cover and simmer for about 8-10 minutes and it’s dinner! If you want to get fancy, you can sprinkle each serving with mozzarella cheese.”
Thanks, Travel Diva!
Oh, and I’ve just got to get this in there…
ROCK CHALK JAYHAWK!!!!
When I was in college we went to the Final Four twice, once to the championship. It did, indeed, rock (except for the part where we didn’t win the tournament). Ah, memories…

Happy to be of help! 🙂
Sara, I’ve been a lurker on this site for awhile…just catching up tonight because the stress of the KU-NC game is driving me nuts. Anyway, I saw the jayhawk and felt compelled to post my first comment. I’m a KU journalism grad too — year 2000. And…my name is also Sarah. And…I’m a copy writer at an ad firm. I swear I’m not copying you. Anyway, I love this site. Rock Chalk Jayhawk!!
My husband is clapping and yelling “I smell ballgame”…2 minutes left in the game. I better go…
