Tasty Tuesday – April 1, 2008

So many readers provided recipes and meal tips a few weeks ago when I was feeling uninspired. I’m going to continue to share them over the next few Tuesdays, if that’s OK with y’all.

This recipe, from The Travel Diva intrigues me. I definitely plan to try it one of these nights. It’s for Balsamic Chicken, and this is how she makes it:

“I saute boneless chicken breasts in a pan, then add a can of diced tomotoes (the kind with garlic and herbs, etc.) and maybe about 1/3 cup balsamic vinegar. Cover and simmer for about 8-10 minutes and it’s dinner! If you want to get fancy, you can sprinkle each serving with mozzarella cheese.”
