So, WMAGs, how is your summer so far? Mine’s going a lot better than I’d thought it would, which I will elaborate on later this week. But it’s still busy, as I knew it would be, as it is every year. The great thing about summer, though, is that I have a few go-to recipes my family loves that I can whip up fast using fresh, seasonal ingredients.
I’ve written about them before, but I figured I’d pull them together into a handy digest for those of you who are looking for something fresh, easy and delicious. Easy summer recipes are at the links!
Bacon, Lettuce and Tomato Sandwiches: No recipe needed because the recipe is in the name of the sandwich! BLTS are pure summer, as far as I’m concerned. Fry the bacon on a cookie sheet in the oven so you don’t have to stand over a hot, greasy stove. And for a California twist, add a little avocado. Yum!
Pesto: Put it on pasta for a main dish, or use it as a pizza sauce or sandwich spread. It also makes a great appetizer when served over cream cheese with crackers. I grow big pots of basil on my front porch, then make pesto from it all summer long.
Salsa: Fresh, homemade salsa can be a meal in itself because once you’ve started eating it, you might not want to stop. You can also use the juice as a Bloody Mary mix, or puree some into a soup for a refreshing cold gazpacho.
Guacamole: It’s a dip, it’s a condiment, it’s a dressing for taco salads. However you choose to serve it, you really can’t go wrong. Just don’t forget to squeeze a little lemon juice over the top to keep it from going brown.
