Happy New Year, WMAGS! What are your resolutions?
Mine is to eat more salad. It’s not just because I ate every treat I could get my hands on over the holidays and feel the need to lighten up a bit. A big reason is because lately I don’t have much desire to eat meat. I’m not becoming a vegetarian, and I don’t have a moral reason for avoiding it, it just doesn’t sound that good to me anymore. In fact, a lot of the comfort foods I used to love just don’t seem that appetizing.
I’m craving some fresh, crunchy veggies. I want salad.
When it comes to great green salads, I learned some secrets from a friend. Here are some tips:
- Use a nice variety of greens for color and depth of flavor
- Add crushed fresh garlic
- Sprinkle on herbs–I like to use dill, red pepper flakes and a pinch of salt and ground black pepper
- Sometimes the best dressing is just a squeeze of lemon juice and a drizzling of olive oil.
For a simple vinaigrette, I love this recipe from Emeril.
And when I’m ready to get more elaborate with salads, I’ve found a few to try.
