Chicken Salad, Your Way

Got leftover chicken from the grill? Here are lots of ways you can turn that into tasty chicken salad for sandwiches and snacks. Make it your way!

Here’s a quick Tasty Tuesday to let you know about a dish I’ve been making a lot lately. The weather’s still warm here, and we’re still enjoying our grill. Often we’ll have leftover chicken, and I’ve had a great time making chicken salad.

What I love about chicken salad is that you can add all sorts of ingredients from your fridge for different flavors and textures.

Just start by cubing your leftover chicken.

You’re going to add mayo to tie it all together, but first, get creative. Some of my favorite “adds” include eggs, celery, grapes, apples, raisins and nuts. Now spoon in enough mayo to create the consistency you like.

Add your own flavor.

To kick up the flavor, try adding rosemary or a dash of curry or cajun seasoning. One or two breasts makes just enough for a couple of sandwiches. Or, my daughter likes eating the salad on Ritz crackers.

Yummy, relatively healthy, and a great way to use up those leftovers. Give it a try!

  1. we love chicken salad in our house too. and you are right, there are so many variables to give it very different tastes. Yum! I may have to make some tonight.

  2. I’m on a chicken salad kick for lunch. But, instead of using leftovers, I’ve been using chicken from the can.
