Tasty Tuesday – Whatever’s in My Fridge

Are any of our readers accountants, or married to accountants? If so, then you can appreciate what the last month has been like at my house. Busy season was a b*&# this year, as my husband worked to help his old employer meet the April 15 tax deadline before going directly into a new job. On top of that, I had to travel more than usual for my own job. It’s easy to understand why we have very few groceries in the house–nobody had any time to shop!

But it looks like my husband will actually be home for a family meal tonight, so I want to serve something besides pizza, carrot sticks and ham sandwiches. I pulled up my recipe board on Pinterest, looking for a little inspiration, and guess what! I found something that pulls together some of the weird things I DO have in my fridge/pantry.

Spaghetti, check.

Cream cheese, check.

French fried onions, check.

Ground beef, check.

I know the ingredients sound weird, but I’ve tried this recipe before (props to Salad in a Jar), and it’s actually pretty yummy. I thought I’d share it in case any of you are in the same boat and have similar odd items lying around.

  1. This reminds me of a recipe my sister-in-law makes, Spaghetti Pie. It’s yummy. But then, I think pretty much anything that someone else makes for me is yummy. 🙂

    1. It’s also a lot like a casserole we used to get at Otts, our favorite pasta place when we lived in Missouri. You sort of can’t go wrong with spaghetti, cream cheese and assorted other casserole-ish goodies.
